1 mature tomato
Virgin olive oil
1 cherry tomato
Cook rice for 18 minutes, allow to cool and set aside.
Prepare tomato marmalade with peel apple cut into pieces, peeled tomato, sugar and lemon juice. Allow to cook for 45 minutes, blend and set aside.
In a bowl, mix boiled rice with 2 spoonfuls of tomato marmalade and 10 previously beaten quail eggs.
Spread this mixture onto a plate and heat at 180o for 5 minutes.
Use pastry cutter to make moulds, then dip in beaten egg and breadcrumbs. Fry and place on plate.
Cut banana into slices, place on sulphurised paper and bake in oven at 200o for 5 minutes.
Place banana on rice mould, with a cherry tomato (previously marked on both sides on grill) on top.
Fry quail egg and place on top of tomato cherry.
Serve with a ball of tomato ice-cream.
