Boiled Galician octopus
Slice of San Simón cheese
Mix of paprika and cayenne pepper
Extra virgin olive oil
Small bunch of tender curly endive
Place slices of obliquely cut octopus (more or less 5 mm thick) and bake in oven at 200o until cheese melts.
Carefully remove toasted bread and place on plate. Sprinkle with mix of paprika and cayenne pepper and decorate with a few tender leaves of curly endive on top.
