101/ Vermouth session

Ingredients

Razor clam
Apple
Xantana
Galician vermouth
Lemon
Salt

Recipe

Steam vacuum-sealed razor clam for 4 minutes. Solidify released water with Xantana, making a seawater gel.
Coat razor clam with this gel and grate a little lemon rind.
Accompany with Galician vermouth and apple in TPT syrup.
