29/ Lamprey Ravioli


Fresh pasta
Mencía wine
Fig jam
Dark chocolate


Make lamprey civet with Mencía wine.
Remove lamprey, allow to cool and cut up into small pieces.
Fill ravioli with pieces of lamprey.
Make a base of lightened fig jam with lamprey ravioli and a thin layer of foie on top. Cover with civet sauce and grate dark chocolate.
