113/ Salmon pie with tartar sauce

Ingredients

FOR THE PIE:

15 g fresh salmon
1 bay leaf
A little fried tomato
1/2 egg
20 ml liquid cream
Salt
White pepper
A little brandy

FOR THE SAUCE:

5 g mayonnaise
1 gherkin
1 g cucumber
1 g onion
1 g of egg white
Fresh parsley
Chives
Caviar
Tomato rose
Reduced vinegar
1 slice of toasted bread

Recipe

Remove bones and skin from salmon and cook for 5 minutes with bay leaf.
Strain and add salt.
Mix salmon with fried tomato, brandy, egg and liquid cream.
Blend in mixer.
Place in mould in bain-marie for 35 minutes at 98o.
Remove from mould and place a slice on toasted bread.
Add sauce on top and finely chopped ingredients.
