Extra virgin olive oil
White wine and demi-glace.
Clean quail and leave in pickle.
Prepare sauce. Brown onion, carrot and pepper. Add white wine. Allow to boil and add tomato sauce, fondo blanco and a little demi-glace.
Fry quail. Pour sauce into casserole dishes, place quail on top and bake in oven at 200o for 5 minutes.
Fry potatoes and use to decorate casserole dish. Ready to serve.
