64/ Quail Egg on Ham Crisp Puff Pastry


Puff pastry
2 quail eggs
Thin slices of cured ham
Olive oil


Hot oil to appropriate temperature for frying.
Place puff pastry in a container, crack open eggs on top and close at the centre. Fry.
Cut several think slices of ham and dry in oven or with salamander until crispy.
When pastry and eggs are ready, serve with the slices of ham.
