26/ Mussel in Bacon Infusion


3 mussels
Chopped spring onion

50 g of bacon
1/2 spring onion
1 clove of garlic
150 g of cream
50 ml of fine wine


Steam mussels until they open.
Fry bacon until crispy.

Poach garlic and spring onion, add wine, reduce, add cream and allow to cook for 15 minutes.
