26/ Mussel in Bacon Infusion

Ingredients

3 mussels
Chopped spring onion

BACON INFUSION:
50 g of bacon
1/2 spring onion
1 clove of garlic
150 g of cream
50 ml of fine wine

Recipe

Steam mussels until they open.
Fry bacon until crispy.

INFUSION:
Poach garlic and spring onion, add wine, reduce, add cream and allow to cook for 15 minutes.
