10/ Remembering the sea (toastie of homemade octopus pâté on slice of smoked salmon with mussel in pickle)

Ingredients

Octopus
Salt
Pepper
Cream
Olive oil
Fish tails
Mussel
Onion
Garlic
Bay leaf
Paprika
Cayenne pepper
Smoked salmon
Slice of bread
Pâté

Recipe

Cook octopus.
Cut into pieces and cook with cream, pepper, a pinch of salt, olive oil and fish tails.
Once cooked, blend and allow to cool.
Cook mussels separately.
Make pickle with mussels, onion, garlic, bay leaf, olive oil, paprika and a pinch of cayenne pepper.
Prepare toastie with a thin slice of salmon with pâté and finish with mussel pickle.
