Rich Tea bicuits
Peel limes, trying to cut the least amount of pith possible, and turn into powder.
Beat egg yolks with sugar and heat milk along with lime powder.
Put the whisked egg yolks and sugar, flour and cornflour in a pot and mix well.
On the other hand, add milk to lime and allow to cook until suitable texture is obtained.
At the same time, to make the coulis, blend raspberries and perfume with a little toasted rum.
Pour through chinois and set aside.
Make biscuit powder to cover croquettes with. Fry and serve with a little coulis.
