27/ Shot of Red Tuna and Tomato Cream

Ingredients

MARINADE:
Soy sauce
Jerez vinegar
Sunflower oil
Pepper and ginger

PRESERVE:
Very mature pear tomatoes
Soy sauce
Albariño wine
Brown sugar
Salt

Recipe

After making the tomato preserve, blend and pour through chinoise to obtain a light cream.   Dice red tuna into 2 cm cubes. Marinate for approximately half an hour. Eat tuna first and then drink tomato cream.
