84/ Tapa of the 800th Anniversary

Ingredients

For cod in green sauce

20 g cod loin
2 g clove of garlic
Parsley
8 ml cod stalk
3 g fresh spring onion
Bay leaf

For sardine

1 sardine
Coarse salt
2 ml olive oil

For cod in garlic sauce

7 g cod
3 g chorizo meat
10 g red pepper
12 g peeled potato
5 g coarse salt
10 g olive oil
10 g onion

Recipe

For cod in green sauce

Clean spring onion and chop very finely, sauté in pot with a little olive oil and bay leaf, pound garlic and parsley, dissolve with a little stock and add onion, cook, salt generously and submerge cod with skin and bones removed, cover and set aside.

For sardine

Gut sardine and remove head and bone without cutting loins.
Cover with salt for 20 minutes, then wash, dry and cover with a little olive oil.

For cod in garlic sauce

Dice onion, sauté in pot with a little olive oil, clean and cut red pepper, add onion and continue sautéing until it is all poached.
Add tomato and chorizo meat, mix and blend. Poach cod and add a little crumbled.
Cook potatoes, strain and break up with fork, mix it all and wrap without breaking.
Add salt.

Presentation

Place cod in its green sauce in small cocktail glass, mould cod in garlic sauce, place in glass at the side with marinated sardine on top, finishing with a fried turnip leaf.
