In Galicia, Carnival is called Antroido or Entroido, which refers to the fact that it is immediately followed by Lent. Before the arrival of this time of abstinence, Santiago lives these days of pagan festivities among parades, fancy dress, satirical humour and a slight touch of transgression. Carnival in Santiago Although some of the celebrations related to this event have almost disappeared from urban memory, the Carnival in still alive in Santiago thanks to the enthusiasm of residents, schools and street bands, who readily participate in parades on two key dates: Shrove Tuesday and Ash Wednesday. Holiday (Shrove Tuesday) The Carnival Festival continues. During the week, in Galicia it is traditional to sample typical products in large quantities, in preparation for the religious fasting that follows the Carnival Festival. The typical dish of these days is 'cocido' or stew, made up of pork (shoulder, chorizos or 'cacheira,' the pig's head), accompanied by boiled potatoes and 'grelos' (turnip leaves). Ancient festival based on the auctioning of pig's trotters as an affering to the saint. This one of Compostela's most popular and traditional festivals. It is followed the next day by the Pig's Trotters Festival, when those in attendance sample the pig's trotters auctioned on the previous day. After the auctioning of the pig's trotters, they are now coocked and accompanied by cabbage 'bertóns,' an exclusive recipe from this neighbourhood that is also available in different restaurants. The most important characters are the "xenerais" (generals) and "correos" (dispatch riders) on horseback, who go around the parishes throughout the day, "cheering" residents and visitors, accompanied by an "army" of standard bearers, choirs and carnival groups.
They finish by staging an "atranque" or "alto", a dialectic confrontation in pairs, which is used to make fun of local, political or social affairs from the previous year.
The "Entroido da Ulla" features small differences from one parish to another, each of which has small defining characteristics that make it unique.
Adorned generals and dispatch riders make up the spectacular nature of this genuine expression of Galicia's traditional carnival.
