The best chefs in the world to attend Gastronomic Forum Santiago 2010
Santiago de Compostela will host a star-studded cast of professionals from the food and wine sector from February 20 to 24.

The best chef in the world, Ferrán Adrià, will be present on the first day of the trade fair, on Monday, February 21. Considered one of the 10 most innovative and influential persons in the world, Adrià will reflect on the current situation of gastronomy in one of the Dialogues. But he won’t be the only Michelin chef. The Roca brothers will also feature in different sessions: Joan in a workshop where he will display his fine cooking skills and Josep in a WineForum workshop. By professionals and for professionals Although the Forum begins on Saturday in the city, the trade fair will be held at the Amio Exhibition Site from Monday to Wednesday.
On Monday, the SweetForum will feature master confectioners such as the master chocolate-maker Ramon Marató and Jordi Butrón, Milan’s Ernst Knam and Denmark’s Jakob Mielcke. On Tuesday, the WineForum will feature sessions by the Jerez wine expert Jesús Barquín, while the siblings Xoán and Xosé Cannas, members of the Nove group, will surprise us with their fusion of cuisine and wine. On Wednesday, the first session will feature a combination of Atlantic cuisine from Brittany and Galicia. There will also be workshops by the Japanese chef Sotohiro Kosugi, the versatile Portuguese chef Chakall, the Scandinavian cuisine of Mads Refslund and the promoters of Food Pairing, Bernard Lahousse and Peter Coucquyt. The Gastronomic ForumSantiago 2010 is an event promoted by Santiago City Council, the Compostela Catering Association and the Chamber of Commerce, organised by Santiago Tourism and Pep Palau, von Arend & Associats.
